Dachikan Open Flame Roast Pork & Spare Ribs

A century-old traditional folk cuisine of Doumen, Dachikan Open Flame Roast Pork is selected from blade meat and the Spare Ribs from high-grade home-raised pigs in Dachikan Village, Doumen Bazar, Lianzhou Town, and other areas.

Preserved with homemade natural-ingredient sauces and dried in the open, the pork and ribs are hung atop a furnace for roasting with fire of litchi wood. Sauces are applied to the pork and ribs more than a dozen times before they’re ready to be served in two hours.

The handicraft technique has been passed on to the 4th generation.
